Vegetarian kidney bean chili with coffee
Do you also feel like slow, hot and spicy dishes? This week a vegetarian recipe for a kidney bean chili stewed in chili spices and coffee. The taste is tough, spicy, warm and warming. The taste is so tough that you don’t miss the meat. Are you going to try?
In this recipe I use fresh ginger, fresh turmeric, fresh red pepper, cumin seeds, oregano and of course roasted paprika and cinnamon.
Kidney beans
The kidney bean is a firm red bean. It is slightly sweet in taste and has a light bite. This bean goes well in a chili dish, but also in a salad with tuna. Well-suited spices are cinnamon, cumin seeds and cayenne pepper, garlic and oregano.
Nutritional value
The kidney bean contains a lot of calcium and magnesium and is rich in fiber and protein, good for your blood sugar, heart and blood vessels. The bean provides a long-lasting feeling of satiety.
Dried beans or from a jar/can?
Preparing dried beans takes some preparation; you have to soak them for 8-12 hours and then (pre)cook them before you can make your dish with them. Still, it is worth it: the taste, smell and bite are much better than canned, bagged or jarred beans.
You can add salt or sugar to taste. Dried beans are also usually cheaper in price and there is more choice.
How do you soak dried beans?
I find it easiest to soak the dried beans overnight in plenty of water. Make sure to use twice as much water as beans. The beans expand considerably.
I then rinse them and boil them in fresh water. The soaking and cooking time are usually stated on the packaging and differ per type of bean. For the kidney bean, the soaking time is 8-12 hours and the cooking time is 1 hour.

Vegetarian kidney bean chili with coffee
Ingrediënten
- 600 gram red kidney beans (soaked and pre-cooked)
- 2 chopped red onions
- ½ finely chopped leek
- 1 finely chopped garlic clove
- 1 sliced red bell pepper
- 2 peeled and chopped sweet potatoes
- 1 small can of corn
- 1 can of organic tomatoes
- 1 tablespoon balsamic vinegar
- 1 cup espresso coffee
- pepper and salt to taste
- olive oil for frying
Herbs
- 1 cm grated fresh turmeric
- 2 cm grated fresh ginger
- 1 teaspoon cumin seeds
- 1 tablespoon oregano
- 1 tablespoon roasted paprika powder
- 1 teaspoon cinnamon powder
- 1 finely chopped red pepper
Instructies
- Fry the onion, garlic and leek with the herbs in the oil for a few minutes.
- Add the bell pepper, corn and sweet potato pieces and mix through.
- Fry the vegetables in the spices for a while.
- Add canned tomato, espresso coffee and balsamic vinegar. Stir all ingredients together.
- Now add the kidney beans. Stir all ingredients together.
- Add salt and pepper to taste.
- Simmer the chili gently for 60 minutes.Make sure there is enough moisture in the chili, but not too much. If there is not enough moisture, add some water. If it is still too wet after 45 minutes, let the chili simmer for another fifteen minutes with the lid of the pan. Optionally you can still bind with some cornstarch.
- Season with salt and pepper.
Serving tip
- Serve with rice, coconut yogurt or a guacamole or with a tortilla.
